February gives way to March and a calendar year comes to a close. Spring is just around the bend. We see blossoms along Highway 101; we get home when it’s still light; and all the while frost still clinging to the windshield! All in all, nature is about to give birth. Let sprouts find their way into your diet. Spring clean inside (your body) and out. Toss out needless accumulations. Shed a few pounds. Stand up, stretch out - on your mark, get ready - springtime! Try your variation on our theme of spinach enchiladas this week, using only ingredients you found here at the Store. For instance … Corn, wheat free or gluten free tortillas One bag fresh, organic baby spinach Chopped green or yellow onions Shredded white cheese (tofu?) Red or green enchilada sauce Wrap the all the ingredients (except sauce) into the tortillas, pour sauce over the top and bake at 3500 to 3570 for 15 to 20 minutes or until golden brown. From tasteforlife, March 2006. There They Go Again … Wal-Mart will be opening 350 stores in America this year and 1,500 total within the next few, according to The Packer’s senior writer Jim Offner. Wal-Mart opened 69 stores in January and 341 in 2005. They are excited to target underserved “urban regions” where they expect record numbers of job applications for their non-union work. A Medford paper reports that Wal-Mart is asking the government to help them meet employee need for affordable health care. Further, the paper reports individual states mandating Wal-Mart increase its benefit package. It will be interesting to watch as this giant effect impacts upon our industry and nation.
